WHY WE LOVE THIS RECIPE
Are you a fan of having last night’s dinner for lunch? We are! Not only does it give us more time in the morning to get ourselves ready and the kids off to school, but we love having a home-cooked, comforting meal and not a grab from anywhere lunch. Double this recipe. Plate one half and tupperware the other. You don’t even need a microwave to warm it up the next day; it’s just as yummy cold. Tofu is a great meat substitute because of it’s high protein. It also has other benefits like lowering LDL (bad cholesterol), which is key in preventing heart disease and it has high levels of phytoestrogen, helping women sail through menopause. No meal is complete without a few veggies. These are high in flavor so there’s no need to dump on dressing or marinara sauce. Go ahead, make enough for tomorrow’s lunch, you’ll be happy you did!
